Hi there,
You are able to travel from Kyoto to Osaka Station, not Shin-Osaka Station, though they are very close. Unfortunately you will need to have set an activation date and have exchanged the pass before you can begin making reservations, so that JR can confirm the timeframe that you'll be using the pass for.
