Hi there,
The easiest options would include Shinkansen stops between Nagoya and Tokyo. These include: Shizuoka, Atami, Mishimi and Odwara (for Hakone). You can take any Tokaido service, so that will be easy.
I suggest picking an area you like where you also have some activities to do. Watching Fuji is fun, but much better if you have something else to do. Such as Tea ceremony in Shizuoka, an Onsen in Atami or travelling the Hakone circle.
