We're landing in Fukuoka, staying for 1 night > Heading next to Osaka, staying for 2 nights > Kyoto, staying for 2 nights > Nagano, staying for 1 night > Lastly, remaining in Tokyo for the duration of the trip.
1.) Would you recommend purchasing the JR Pass? If so, would the 7 day pass be suffice?
2.) Are the seats already included with the price? If not, can you please direct me to the right link to purchase the seats in advance.

1.) Yes, for this I would recommend using a 7-day JR Pass. You will do multiple different intercity trips using the Shinkansen, and this will really help you safe money.
