using the jr pass to travel from kansai international airport to osaka

With your current itinerary it may be better to simply my the tickets as you go.
You can use the pass to travel from Kansai Airport though,

Here is a breakdown of ticket prices:
Kansai Airport -> Osaka ¥ 1,160
Osaka --> Kyoto ¥ 540
Kyoto --> Nara ¥690
Nara --> Tokyo ¥ 13,850

For a total of 16,240 the 7 Day Jr-pass is 28,300 so you would not cover the price with your current itinerary. What you could do is make a side trip to Hiroshima for instance.

just two last questions, is there a Japanese website that I can check the train times/fares?

and lastly, if I decide to add extra stops and end up ordering the JR pass when is the latest date I can order it and expect it to arrive in good time before I go? Im getting it delivered to Sydney and Im leaving for Japan on Mon 18 Feb so wondering when the absolute latest i could leave it for delivery?

The dispatch takes takes 3 working days to reach Australia. However if you have the luxury of time I would order at least a week before, this way you are sure to have the pass on time. The latest I would order would be on Tue 5th of Feb.
