Hi, My husband and I are planning on getting a 14 day green pass for our trip to Japan in 1 week. We think we will be starting the pass on Oct 25 but it could be on the 26. Is it OK to start earlier or later than the order says.

My second question is: we are traveling from Tokyo --Nagoya--Takayama-Kanazana-Koyoto-Osaka-Hiroshima-Nagasaki-Fukuoka. Is the rail pass the economical way to do this?

You choose when you activate the JR Pass, the reason we ask is just so we are aware of the rough date, so yes that's fine.

Yes, for your itinerary if you were to buy individual green car tickets a JR Pass would likely be your most cost effective option because of your use of the Shinkansen for most of your train journeys.
